Power 80 is the dark chocolate that celebrates intensity. At 80% cocoa it is dominated by roasted cocoa and a tannin-like bitterness, with woody notes and a fruity lift underneath.

The second number matters as much as the first: fluidity 2 of 5 — low. This is not a moulding chocolate. It is built for flavouring, where you want maximum cocoa presence and enough body to hold structure.

Best for

Mousse, crèmes, ganache, brownies, moelleux, ice cream and sorbet. Anywhere the chocolate has to carry flavour through dilution — whipped, frozen or baked — 80% gives you room that 54% does not.

It is also the answer when a customer asks for something less sweet. Higher cocoa means less sugar, and Power 80 delivers that without tasting thin.

Where not to use it

Fine moulding and thin enrobing. Low fluidity traps air in detailed moulds and leaves thick, heavy shells. Use 811 for that.

Pairs with

Coffee, cloves, mandarin, pistachio, Earl Grey, Shiraz, blue cheese, truffle oil. The bitterness stands up to assertive flavours that would overwhelm a milder dark.

Bean origin

A blend from three origins — Ivory Coast, Ghana and Ecuador — for a balanced, round taste rather than a single-origin character.
