A dark coating chocolate that does not need tempering. Cacao Barry's Prima replaces cocoa butter with vegetable fat, which removes the crystallisation problem entirely — melt it, use it, and it sets hard with a good gloss every time.

This is a working tool, not a substitute for couverture. Where couverture is the product, use couverture. Where the coating is a shell around something else — a cake pop, a dipped cookie, a moulded novelty, a base under a decoration — Prima does the job faster, cheaper and without the risk.

Best for

Cake pops, dipped cookies and biscuits, moulded novelty shapes, sealing tart bases, coating ice cream bars, decorations that need to survive a display case.

Where not to use it

Anywhere the chocolate itself is the selling point. Compound coating does not have the melt or the flavour depth of real couverture, and a trained palate notices immediately. It also cannot be labelled as chocolate in most markets.

Why it saves time

No tempering means no 45–27–31 cycle, no seeding, no test strips, and no batch lost to a temperature mistake. In a busy bakery running a coating station alongside other work, that is often the whole argument.

Storage

Sealed, 12–20°C, dry and away from light and strong odours. More heat-tolerant than couverture, but not immune.
