About Antalia Wholesale

Antalia Wholesale is an authorized Canadian distributor of the Barry Callebaut Group — Callebaut, Cacao Barry and Van Leer. We supply couverture chocolate, cocoa powder and pastry ingredients to bakeries, cafés, restaurants, hotels, chocolatiers and food manufacturers across Canada, from a climate-controlled warehouse in Concord, Ontario.

What authorized distribution actually means

Every bag we sell comes through official Barry Callebaut channels and leaves our warehouse in its original sealed manufacturer packaging. We do not repack, we do not relabel, and we do not source from the grey market.

This matters more than it sounds. Repacked chocolate loses its traceability — you cannot verify the batch, the best-before date or the allergen declaration against the manufacturer’s own documentation. For a production kitchen operating under CFIA requirements, that is a real problem. For a chocolatier whose reputation depends on consistency, it is a bigger one.

When you buy from us, the lot code on the bag is the manufacturer’s lot code.

The three houses we carry

Callebaut — Belgium, since 1911

The working standard in professional kitchens. Produced in Wieze, built around consistency: the 811 you open in November behaves exactly like the one you opened in June. This is what most bakeries run on.

Cacao Barry — France, since 1842

The chocolatier’s house. Organised around origin and aromatic character rather than industrial repeatability — single-plantation selections, Q-Fermentation, and the Extra Brute cocoa powder that remains the reference in professional pastry.

Van Leer — North America, since 1949

Built for volume. Bake-stable chips and chunks, compound coatings and dependable couverture for bakeries, ice cream makers and food manufacturers where cost control matters as much as flavour.

Storage and the cold chain

Chocolate is a temperature-sensitive product and most of what goes wrong with it goes wrong in storage or transit, not in the factory.

Our Concord facility is climate controlled year round at 12–20 °C. Between May and September we ship insulated with cold packs where the forecast at the destination requires it — we check the weather, not the calendar.

We are also direct about the limits of that. Couriers do not run refrigerated vehicles, and in a Canadian July a parcel can exceed 30 °C in a depot. If you are in the Greater Toronto Area during high summer, free pickup from Concord removes the risk entirely, and we will tell you so rather than take the order and hope.

Who we work with

Production bakeries buying by the case. Independent pâtisseries who need four recipes rather than forty. Chocolatiers working on signature ranges. Restaurants and hotels running dessert programmes. Ice cream and gelato makers. Culinary schools. And home bakers who have outgrown the grocery aisle and want to work with the same chocolate the professionals use.

There is no minimum order. Case pricing applies automatically at checkout on eight bags or more, with no code and no account required. For larger volumes we open trade accounts with tiered pricing — apply through the contact page and we usually respond the same business day.

What you can ask us

We would rather answer a question before an order than process a return after one.

If you are not sure which chocolate a recipe needs, tell us what you are making. Fluidity matters as much as cocoa percentage and it is the single most common reason a well-tempered batch still fails — a 70% chocolate with the wrong fluidity will not do what you need it to do, however carefully you temper it.

We publish what we know in our technique guides: tempering, fluidity, bloom, quantities, and which recipe suits which dessert. It is the same advice we would give you on the phone.
