Single-origin dark couverture from the Dominican Republic, made with beans grown on Hispaniola. Long sold as Cacao Barry Saint Domingue, it now sits in Callebaut's Signature Collection under the Zestina profile — the range built around pronounced fruit and a sweet-sour edge.
It opens on deep roasted cocoa, then dried fruit and raspberry come through, with a tang that keeps a 70% chocolate from feeling heavy. Sweet, sour and bitter are all present and none of them wins. That balance is the whole point of the Zestina profile.
At 44% fat it carries unusually high fluidity for a 70% chocolate — grade 4 of 5. That combination is rare and useful: full dark intensity that still flows thin enough for fine moulding, enrobing and panning.
